Rogan Josh - a fairly hot flavoured dish with plenty of tomatoes, red peppers, thinly sliced onions and garnished with fresh coriander.
Sambar - A hot dish cooked with lentils and lemon to create a spicy sauce
Pathia - diced onions and green peppers are cooked with lemon juice to give a hot and tangy flavour
Ceylon - a hot curry cooked with extra tomato puree and garnished with egg
